MOJITO

12mint leaves, plus garnish sprig 1 large tsp sugar syrup 25ml fresh lime juice 50ml Havana Club golden rum 3 dashes Angostura bitters Soda water Crush mint leaves in a glass with syrup and juice, fill with crushed ice. Add the rum and bitters, top up with soda water and stir. Garnish with mint. Best served in tall glass.

CAIPIRINHA

1 Lime cut into eights 50ml Sagatiba Cachaca 4 tsp sugar syrup Crush the lime with peel to release both the juices and skin oils in the Base of the glass. Pour in Cachaca and syrup, add the crushed ice and stir well. The Caipirinha is Brazil’s national cocktail and is typically served in a tumbler with a drinking straw.

MARGARITA

50ml Jose Cuervo Clasico Tequila 25ml Cointreau/triple sec 25ml fresh lime juice. Salt and lime wedge to garnish Use a cocktail shaker (or stir vigorously) to mix Tequila, Cointreau, lime juice and some ice. Wipe the glass rim with the lime wedge and frost with salt, the strain the mixture into the glass and garnish with the lime wedge.

MOSCOW MULE

50ml Stolichnaya Vodka 25ml Fresh lime juice 2tsp sugar syrup 3 dashes Angostrura bitters Ginger Beer Sprig of mint leaves or lime slice. Use a cocktail shaker (or stir vigorously) to mix the vodka, juice, syrup, bitters and some ice. Strain into an ice filled glass. Top up with ginger Beer and stir and garnish with mint or lime.

FRUIT BLITZ

Non-Alcoholic 1 litre Ocean Spray Cranberry and Raspberry juice drink 380g Frozen summer fruits Dash of lemonade Sprig of mint leaves. Reserve some fruit to garnish. Blitz the juice and frozen fruit in blender or juicer. Pour into glasses and add lemonade. Garnish with mint leaves and the fruit.
